November 18, 2022Pisco y Nazca Ceviche Gastrobar has been delighting guests with modern twists on traditional Peruvian fare since 2015. Inspired by Peru’s top ceviche eateries, Pisco continues to artfully serve bold-flavored dishes and unique cocktails. Their new seasonal menu just launched and it includes fall ingredients plus a special cocktail program that steals the show.
The tiradito de salmon is a light and refreshing starter made with Salmon sashimi, avocado, crispy ginger,ají amarillo and leche de tigre.
Traditional inspired dishes include Salchipapas with beef sausages and French fries and Chupe de Camarones, a Peruvian shrimp chowder with queso fresco, huacatay and a poached egg. The star of the fall menu show is the Tacu con Chancho Glaseado, made with honey pork, black bean tacu tacu and a fried egg served with salsa criolla and fried yuca on the side. Traditional tacu tacu is made with canary beans, but Pisco makes theirs with Cuban arroz moros. The rice and beans are combined to a cake-like consistency and cooked on low until lightly brown on the bottom and slightly crispy.
Fall libations include the Piscotini, made with Pisco, simple syrup, lemon juice and garnished with frozen grapes and the Nazca Sour, made with Pisco, red wine, simple syrup, lemon juice and egg whites.
