The Restaurant now features various cuisines and traditional flavors of Europe's "Sun Coast," inclusive of the Mediterranean regions of Spain, Italy, the South of France and Provence. The Restaurant's classic Spanish cooking technique of grilling "a la plancha" fortifies and extracts the versatility of flavors and aromas of these regional Mediterranean ingredients.

Executive Chef Mathias Gervais creates an innovative summer selection to highlight his global experience within the Mediterranean regions of Spain, Italy, the South of France and Provence. The menu additions are as pleasing to the palate as they are to the eyes. Each dish is an exceptional work of art that showcases the colors, textures, and flavors of the season. Also joining the culinary celebration of summer is Chef Sommelier Dwayne Savoie with a new collection of wine and spirits to pair with these exquisite dishes.
Among our favorites of the new summer additions is the Strawberry Gazpacho ($14) served with Guanciale Iberico, crushed black pepper and basil is a refreshing alternative to the traditional gazpacho and matched well with Taittinger Brut champagne.
Another newcomber we loved is the succulent poached Maine Lobster Salad ($29) plated atop pink grapefruit with citrus dressing.
Gervais expertly adapts locally sourced ingredients to balance the rich flavors of traditional dishes such as seared Foie Gras($24) with caramel ginger glaze and mango. Savoie recommends Royal Tokaji 5 Puttonyos Aszú. Available in 2008 vintage, this Hungarian classic captures aromas of apricot, honey and orange peel with refreshing acidity on the finish.
The pan-seared Atlantic Striped Bass ($32) with roasted eggplant and fava beans features a delicate sauce vierge - a combination of olive oil, lemon juice, chopped tomato and basil.
The Colorado Lamb Chop ($39) will undoubtedly satisfy those of you seeking a more carnivorous approach to summer. The dish is complemented by mashed potatoes with subtle hints of truffle.
The menu additions also include spectacular dessert options such as The Vacherin ($13). This classic French masterpiece is a combination of berries ice cream over a vanilla base then topped with whipped cream, raspberry coulis and delicate slices of meringue.
Along with the new seasonal menu, The Setai now invites guests to attend a new weekly reception to meet the Chef and Chef Sommelier while enjoying complimentary wine or spirits and light fare from The Restaurant. This fabulous opportunity to engage in intimate discussions is available on Wednesday evenings, from 6:00PM to 6:30PM.
