For your main course option, choose the Florida Red Snapper. Ward sears this local fish until the skin is crisp and golden brown. He then tops the filet with baby artichokes and bacon crumble. An aromatic sunchoke broth is drizzled on to the plate as it’s served, adding layers of sweet and nutty flavors.
