Diners can explore the diverse flavors of Peruvian gastronomy from upscale novo-Andean fare to Asian-Peruvian fusion and traditional seafood ceviche. "The best way to start is by discovering the world of cebiches," says Acurio "Peru is the cebiche capital of the world."
Gastón Acurio is a chef, writer, businessman and promoter of Peruvian culinary arts. In 1994 he opened Astrid&Gastón in Lima, Peru which has recently climbed to number 14 in the World's 50 Best Restaurants list. Now at the helm of Mandarin Oriental’s La Mar by Gaston Acurio is Chef Diego Oka. Oka blends his personal experiences and Japanese roots, drawing influences from food he discovered during his travels in Mexio and Colombia to his grandmother's cooking in Peru.
During our preview of this waterfront dining gem, we sampled some of Oka's signature creations including Quinau Chaufa Andean Red Quinau, Hauncaina Potatoes Okinawa Marbled Potato, and Causa Nikei Traditional Potato Dough.
This rising star chef has worked alongside celebrity chef Gastón Acurio for the last 13 years at various La Mar locations around the world. “Diego Oka is an incredibly talented chef, who has been a vital member of our team and a devoted contributor to the success of La Mar restaurants,” said Gaston Acurio.
“I am extremely excited to share the flavors and culture of Peru with this vibrant and dynamic city,” said Oka.
With beautiful views of the Miami skyline and Biscayne Bay, La Mar by Gastón Acurio is expected to open in late-February at the Mandarin Oriental located on Brickell Key.
