July 8, 2016Last night kicked off Quality Meats' multi-day, steer-roasting extravaganza. For three days, the Quality Meats team sets the stage for a grand barbecue with a new menu featured each night. Executive Chef Patrick Rebholz explains, “Everyone does whole pig roasts in Miami, so we decided to roast a whole cow like the Argentineans.” There’s no better time than during Miami’s cool spring season to host an outdoor affair and this one is quite impressive.
In true asado-style, the meat masters take over part of the terrace to set up an assembly line of different open-flame cooking techniques. Starting at 8AM each day, the team fires up each station and caresses the wood, coals and stones until they become perfectly glowing embers. On one side, racks of ribs are perched onto enormous rotisserie frames that are rotated throughout the day over a wood flame until ready to serve during the nightly dinners.
Cooking grates line the other side and hover right over the heat source. The lower-lying grates are used to toast bread, sear sausages and other cuts of meat along with small potatoes. Beef shoulder is slowly braised in a large bubbling cauldron positioned just a bit higher.
On this first night, we were greeted with local beer courtesy of M.I.A. Brewing Company. As we made our way toward the fiery spectacle, empanadas were quickly fried in another cauldron while we indulged in overflowing platters of chimichurri steak sandwiches and balls of beef-stuffed cornbread.
For the main course, guests were invited to a bountiful buffet of salad and tons of meat. Although we loved the bitter greens with charred eggplant and pomegranate seeds, it was all about the meat. Wood slabs dripped with the meat juices from all sorts of cuts while Chef Patrick sliced away. Our favorite? Prime rib. It had just a subtle hint of smoke flavor and was so tender it melted in your mouth like butter.
