Chef Daniel Boulud’s DBGB Kitchen & Bar has satisfied Miami food enthusiasts for its second year in a row. The popular pop-up series invites guests to enjoy a whole hog feast complimented by generous portions of side dishes at db Bistro Moderne inside of the J.W Marriot Marquis in Brickell. During this installment, J. Wakefield Brewing, the craft beer king of Wynwood, was brought on to pair a delicious family-style feast with his unique libations.
The evening started off with passed hors d’ouvres in db Bistro’s chic lounge. Floor to ceiling windows allowed us views of the bustling Brickell streets. Executive Chef Jason Pringle’s house-made charcuterie was a huge hit, as well as the Peruvian ceviche. Our bites were paired with JWB’s Ananas Kolsh, a crisp and fruity beer with notable hints of pinepple.
As we were ushered into one of db Bistro’s elegant private dining rooms, you could hear murmurs from the hungry crowd anxiously awaiting their precious pig. But before the hog is brought out, we were presented with a variety of starters. The Iceberg & Blue Salad with tomato, walnuts, bacon bits and herbs was beautifully presented with just the right amount of dressing. This dish was paired with the Symbiote Black IPA. For those of us that are not familiar with the Marvel Superhero reference, this beer is inspired from when Spiderman turns into the evil Venom through an enveloping symbiotic bond. Nerd alert!
The main event, a large Roasted Suckling Pig with red wine, mushroom and onion beckoned a standing ovation from the guests. This hog, generously sacrificed for a group of ravenous attendees, was stuffed with pork loin, Swiss chard, confit tomato and olives. Wilbur (that’s what we named him) was juicy, flavorful and paired perfectly with the Have You Seen My Stapler Belgian Style Trippel. If you’re not familiar with THIS nerdy reference, this brew is inspired by the movie Office Space.
Towards the end of the evening, the lights were dimmed low and Chef Pringle came out with a marvelous Baked Alaska dessert. Made with Italian meringue, almond sponge cake, pistachio ice cream and raspberry sorbet, the sweet delicacy was artistically flambéed, carefully sliced and served. To further tempt our sweet tooth, two giant ice cream sundae bowls were presented at our table. Our favorite is the Peach Melba made with peaches, chantilly, raspberry and almonds. This delight was paired with the best beer of the evening (and highest ABV- 12%!) the Coconut La Nada Russian Imperial Stout.
