July 1, 2015Many Italian restaurants rely on the traditional European fall or winter truffle season to compose their menus. Scarpetta at the Fontainebleau Miami Beach elevates truffle standards by sourcing their black truffles from Australia during their winter season. The Land Down Unders winter bounty results in a wonderful five-course menu by chef de cuisine Marlon Rambaran, available through mid-September. Every dish on the prix-fixe menu features freshly shaved black truffles and is priced at $195 per person exclusive of tax and gratuity. Guests can enjoy their decadent menu items paired with fine wines for an additional $115 per person.
Guests can indulge in an amuse bouche of Steak Tartare served with preserved truffle and pecorino. Scarpettas classic Creamy Polenta is served with a fricassee of truffled mushrooms as your Primi Piatti.
Next, enjoy Swiss Chard and Ricotta Raviolini small ravioli stuffed with Swiss chard and ricotta served with English peas and a truffle sabayon.
The Pici with porcini mushrooms, asparagus and garlic crema is sure to please the palate. Guests will love the main course proteins, Halibut with morel mushrooms, local corn, fava beans, guanciale and tarragon oil as well as the Filet of Beef served atop a hazelnut potato creme with a caper shallot reduction and charred broccolini. Chef Marlon delights guests with his own selection of sweets for dessert.
Guests may choose to order from the tasting menu or a la carte and top their dish with freshly shaved black truffles for a supplemental charge.
