Each season, the bars located inside the Fontainebleau Miami Beach introduce a new cocktail menu to celebrate. The signs of fall and winter may not be so obvious in Miami, but these new cocktail additions are the perfect opportunity to warm up (or cool down).
For that next luxury cocktail crawl with your best friend or lover, cozy up and get ready to indulge in the flavors of the season.
Bleau Bar
Located just off the central lobby, Bleau Bar is a convenient stop for an aperitif or before that night out at LIV. While the change in weather is subtle, locals are quick to change their style from open toe to stylish boots. The name of Bleau Bar’s newest cocktail befits the occasion. Fall in Fashion ($17) combines every essence of the season with granny smith apple, vanilla bean cinnamon stick-infused bourbon and bitters. If you’re in need of a little pick-me-up, try the Headless Horseman ($17) prepared with Godiva White Chocolate Liqueur, espresso and Brugal Extra Viejo.
Scarpetta
Make a quick journey to Scarpetta by Scott Conant and find three new cocktail options named for their Italian influence— two boozy options Venezia and Eclisse, and our favorite, the Palermo. Palermo’s complex notes won’t transport you to Southern Italy, but rather a ski chalet in Aspen. Montenegro Amaro is combined in a cocktail shaker with soursop purée, lemon juice, cinnamon syrup and bitters. To finish, tiny shavings of cinnamon and nutmeg top the drink before its garnished with flamed star anise. We could drink this one all. night. long.
Hakkasan
Head to Hakkasan back through the main lobby. (A brisk walk will do good if you’re following our cocktail crawl.) Dark teal alcoves and electric blue lighting never seem to lose their allure. Taking inspiration from the restaurant’s chic, contemporary vibe, the new drinks are just as inviting; Sunset in Chateau ($16) with Lemongrass vodka and sparking wine, 400 Rabbits ($16) Yellow Chartreuse and Mescal with pineapple and yellow pepper juices; and the Mah-Teh Fizz ($16) - mate steeped in a French press and blended with gin, whiskey, passion fruit syrup and crushed shiso leaves. Tip: nibble on dumplings if you plan to try all three cocktails
StripSteak by Michael Mina
Make a final stop at StripSteak, where the latest additions are imaginative interpretations of the hotel’s iconic history. Inspired by 1950s, the classics are revived with a twist; Ants on a Log ($15) a rum-based drink garnished with lemon zest and three coffee beans; Goldfinger ($25) a boozy mix of vodka, FEW Spirits Breakfast Gin, Tempus Fugit Kina L’Aero d’Or, Lustau East India Solera Sherry, Lustau Manzanilla Sherry, and Bitter Truth Olive Bitters. The favored of the new trio takes its name from an area of the hotel rumored to have hosted the most beautiful women of its time. Rather than Miami’s thigh-high, winter boots, think long gowns and fur stoles. The Poodle Room ($15) gets its Prada-pink color from a combination of vodka, lemon juice, egg white and strawberry-coriander syrup. A luscious creamy cocktail served in a classic coupe.
