The Restaurant at The Setai honored Veuve Clicquot Champagne at this extraordinary wine dinner. We were joined by Executive Chef Mathias-Gervais and Chef Sommelier Dwayne Savoie whom prepared an outsanding four-course menu with hand-picked pairings by Chef Sommelier Dwayne Savoie.
Founded in the early 1700s, this French champagne house is globally recognized as a product of impeccable quality. Madame Clicquot became one of the first business women of the modern era when she took over the family business. In that first year (1805), she shipped over 110,000 bottles and shortly after created the first Vintage champagne.
Boasting a collection of exceptional and rare wines, The Restaurant at The Setai was the perfect backdrop to showcase top vintages of Veuve Cliquot champagne.
Our first course featured Maine Lobster served with open ravioli of watermelon, Homestead-Grown grapefruit, spring herbs and paired with Citrus Veuve Clicquot (2004).
The second course was a delicately poached dover sole with scallop mousse, garden pea nage, lemon thyme, and Alverta President Caviar matched with Veuve Clicquot Rosé (2004).
For the third course, we enjoyed veal blanquette with craw fish, morels and tarragon paired with Veuve Clicquot, La Grande Dame (2004).
This exquisite dinner concluded with a decadent milk chocolate dome prepared with Valrhona chocolate mousse, passion fruit crémeux and passion sorbet and Veuve Clicquot Demi-Sec.
