1 Ingredients

  • ½ unsalted butter room temperature
  • 1 cup cream
  • Extra virgin olive oil
  • Kosher salt
  • Freshly ground black pepper
  • Toasted pecans
  • Marshmallows

2 Preparation

Preheat oven to 350.Toss the sweet potatoes with extra virgin olive oil and season with salt and pepper. Roast on a sheet tray in the oven for 20-25 minutes until completely cooked. Remove and peel off the skin and put the sweet potato in a bowl.

Mash or rice the sweet potatoes, add the butter, cream, salt, pepper and mix together thoroughly. Place in oven wear dish top with marshmallows and pecans and bake at 350 until golden brown.
