The 43-year-old culinaire, who was raised in Chicago, developed a real passion for cooking at a tender age. In 1990, with the basics of home cooking under his belt, Azar decided to pursue his dream of becoming a chef and enrolled in a culinary arts program at Washburn Trade School in Chicago. While still in school, he took on a job as a line cook at a local restaurant. Here, he honed his skills and learned the intricacies of the business, while also establishing relationships with people who would help pave the way for his culinary career. In 1991, he received a degree in Culinary Arts.

Soon after graduating, Azar received a personal phone call from Emeril Lagasse, and offered him a job in the kitchen of his second New Orleans restaurant, Nola. In 1992, Azar relocated to that famous food city, and immediately fell in love with Louisiana’s diverse culture and flavors, becoming an expert at working with staple local ingredients, such as crawfish, oysters, red fish, and speckled trout.

Buoyed by his success, in 1998 Emeril anointed Azar as sous chef of his restaurant in Orlando, Florida and then quickly promoted him to executive sous chef. Ensconced at the Orlando restaurant, the young toque helped position Emeril’s as Central Florida’s most acclaimed dining destination, drawing countless tourists and locals alike. In 2003, having worked his way up the ranks, Azar was named chef de cuisine for Emeril’s - Miami Beach, located in the beautiful Loews Hotel.

After his success in the Emeril restaurant empire, Azar spent some time as a culinary consultant waiting for the perfect restaurant opportunity to come along. In late 2010, restaurateur Steve Haas, who also serves as the chairman of the Greater Miami Convention & Visitors Bureau, asked him to take the helm of what is sure to become the city’s hottest new dining establishment, City Hall. The rest, as they say, is history.
