"Miami was the inspiration for The Dining Room. Miami is a melting pot of different cities and different cultures and I tried to tie them all together. This is how I came up with the inspiration for the menu. Local ingredients are delivered daily. Sustainable fish like the Branzino and Stripped Bass are also delivered daily. I like to take advantage of the freshness Miami has to offer."

Chef Horacio Rivadero moved to Miami Beach from Argentina ten years ago. His Mother inspired him to become a chef when he was 5 years old. She made the dough, he made the bread. Chef Horacio Rivadero, Executive Chef of OLA Restaurant and The Dining Room, reflects his commitment to locally grown ingredients in the restaurant's menu; which often varies, taking advantage of that which is freshest in the market that day.
Cooking is an art to Horacio. He likes to bring back childhood memories, when you take a bite out of his dish. His specialty dish is Fish, every way, with a Spanish style and specialty influences. Horacio’s greatest accomplishment was developing the menu for The Dining Room, and then reading the first review about it, written by Lee Klein. He accomplished this successful menu without a culinary degree. He has worked under Chef Douglas Rodriguez for 8 years at OLA restaurant.
